Banana Cupcakes


1-1/4 cups all-purpose flour
1 tsp baking soda
pinch of salt
1 cup sugar
1/2 cup vegetable oil
2 eggs
1 cup mashed banana (about 2 large)
1 tsp vanilla

1. Heat oven to 350 degrees. In small bowl, mix together flour, baking soda and salt.

2. In a bowl, whisk together sugar, oil, and eggs until smooth. Add banana and vanilla, beating well. Add flour mixture, beating until smooth.

3. Scoop batter into prepared pan. Bake in pre-heated oven for 24-28 minutes or until tops of cupcakes spring back when lightly touched. Let cool in pan for 10 minutes.
